Featured Varieties

Bursa BlackSuitable for fresh consumption

A fresh fig variety with dark purple-black skin and juicy, soft flesh; its short shelf life makes it suited to quick consumption after harvest or short-distance shipping.

Sarilop (Aydin Fig)For drying, a widely grown variety

A yellow-green-skinned variety with a high sugar content, well suited to drying; it is the Aegean region's leading drying fig variety, widely used both domestically and for export.

Growing & Harvest

The fig tree adapts well to hot, semi-arid climates and can produce a good yield even with limited irrigation; the hot summers and well-drained soils of Izmir, Mugla, and Bursa suit both fresh and drying fig production. Fruit is hand-picked, generally every few days during the harvest season, once it has fully ripened on the tree; drying varieties are left to ripen until they are ready to naturally drop and begin drying in the sun. Because fresh figs are a very delicate fruit, careful handling is needed during harvest and transport.

Uses & Applications

Figs are eaten both fresh and dried; fresh figs have a short shelf life and are meant for quick consumption, while sun-dried or controlled-environment-dried figs can be stored for a long time and eaten year-round. Dried figs can be eaten as they are, or used in desserts, breakfast mixes, and certain baked goods. Keeping moisture content at the right level is important for the storage quality of dried figs.
